As a professional pastry chef, I have a large collection of cookbook and was happy to add this to my shelves. Book is gorgeous, recipes are clearly written.   • 4.0 out of 5 stars from Michael Wolfe -- Beautiful book, but . . . : I think I’m gonna love this book, but you MUST read through the recipes THOROUGHLY before starting, especially the Laminated Dough chapter. I was tripped up by the Chocolatine recipe. I started it thinking I had all of the ingredients necessary. But after starting and making the yeasted dough (late at night), I realized that I needed 500 g butter to make a butter block which I didn’t have. This was NOT listed in the ingredient list for the recipe. As a matter of fact, none of the butter needed for the blocks is listed with ANY of the laminated dough recipes. He refers you back to the start of the chapter on how to make the block and laminate the dough AFTER you have already started the recipe. I’m a VERY experienced baker, and I have MANY books on French pastry/baking. But, I’ve NEVER seen recipes formatted across several different, non-contiguous pages such as this. I prefer to have my lists of ingredients “up front” when I plan to make a recipe. I don’t like to search for them across several different pages. ( Reviewed in the United States on March 7, 2021 )
